Remilk & Gad Dairies Launch “The New Milk” — Real Dairy, No Cows
A new chapter in dairy innovation has begun with the launch of **“The New Milk” — real milk made without cows — by food-tech innovator Remilk in partnership with Israel’s established dairy brand Gad Dairies. The product is currently rolling out in cafés and restaurants across Israel, with a nationwide supermarket launch planned for January 2026.
Positioned as a recombinant dairy breakthrough, The New Milk is created using precision fermentation technology that produces bioidentical dairy proteins without any animal involvement. Unlike plant-based alternatives, its proteins are genetically identical to those found in traditional cow’s milk, delivering the same taste, texture, mouthfeel and functionality, including superior frothing ability in coffee.
The launch range initially includes a barista-style milk for foodservice outlets and, from January 2026, everyday milk and vanilla-flavoured milk variants for supermarkets. The New Milk is marketed as lactose-free, cholesterol-free and rich in essential nutrients, and also contains up to 75 % less sugar compared with conventional milk formulations.
Remilk’s technology, developed over several years with significant R&D investment, deploys fermentation tanks where engineered microbes produce dairy proteins traditionally obtained from cows. This breakthrough reflects a wider trend in cultured dairy and precision fermentation aimed at reducing reliance on livestock while maintaining authentic dairy quality.
Industry commentators note that “The New Milk” represents a landmark moment where traditional dairy heritage meets future-facing food technology, potentially redefining consumer access to milk products with reduced environmental impact and expanded functional benefits
